Ingredients
500gm Boneless chicken
4tbspSoy sauce
1-1/2tbspRed chili paste
1Egg
1/2cupRefined Flour
2tbspCorn flour
1tbspGinger garlic paste
1tspSalt
Oil for frying
For Sauces:
2tbspOil
3-4red chilieslong
1Onionscut in length
1Capsicumcut in length
1tspGinger garliccrushed
1tbspred chili paste

Cooking Method
In a bowl, toss the chicken pieces with cornflour, refined flour, soy sauce, red chili paste, egg, ginger garlic paste and salt. Mix well to coat evenly. Set aside for 15 minutes.
In another bowl, whisk together soy sauce, ketchup, sugar, red chili paste and ginger, garlic paste. Add a little water (if needed) to get a sauce-like consistency.
Heat oil in a pan or wok over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through on all sides. Remove from the wok and set aside.
In the same wok, add the bell peppers and onion. Stir-fry for 2-3 minutes until softened and slightly crisp.
Pour in the prepared sauce and bring to a simmer. Add the fried chicken and stir gently to coat everything in the sauce.
Garnish with toasted cashews, chopped green chili (if using), and a sprinkle of sesame seeds.
