Boil grated carrot for 2 minutes, now remove in a strainer and keep aside.
Heat ½ cup ghee in a wok, add sugar and cook till sugar is dissolved.
Now add boiled carrot and cook and stir well on high flame.
Then add almonds, pistachio, kewra and cardamom powder. Cook few minutes then add khoya and mix well and let it cook for 2 minutes.
Transfer into a serving dish and serve hot.
