Afghani Pulao is an incredibly delicious dish from Afghanistan, as the name suggests. This Afghani Pulao Recipe by Shireen Anwar, is a light and aromatic rice dish made with chicken, other meat or beef, that’s jeweled with carrots and raisins is the Afghan national dish.

Ingredients
  • 1 kg Chicken 8 piece
  • ½ kg Sella Rice
  • 20 Almonds blanched
  • 10 Cashews
  • 10 whole Pistachios blanched
  • 20 Raisin soaked
  • 2 tbsp Coconut sliced
  • 1 Carrot sliced
  • 1 tbsp Mixed Whole Spices
  • 1 tsp White Cumin Seeds
  • ½ tsp Cardamom Powder
  • Stock Cube
  • 3/4 cup Oil
  • 2 tbsp Sugar Caramelized in pan and add carrot slice
  • ½ cup Brown Onions
Cooking Method
  1. Heat oil in a pan over medium heat.
  2. Add whole spices, half cup brown onion, and chicken, fry well, add stock cubes, green cardamom powder, salt, and 4 cups water, cover and cook till chicken nearly done.
  3. Add soaked rice, cook till done.
  4. Fry all the nuts, each separately in little oil, keep aside.
  5. Remove rice in a platter.
  6. Garnish with fried nuts and caramelized carrots.
  7. Delicious Afghani Pulao is ready to serve.
  8. Enjoy!
