In a separate bowl, whisk together yogurt, milk, saffron, and kewra water, then add this mixture to the pan and stir to combine. Finally, add warm water and salt to taste, bring to a boil, then reduce the heat to low and simmer, covered, for 1-1/2 hours or until the mutton is tender and the sauce has thickened, stirring occasionally. Ingredients
  • 1 kg Mutton shoulder or leg, cut into small pieces
  • 1 cup Brown onion crushed
  • 1 tbsp Ginger garlic paste
  • 1/4 tsp Turmeric powder
  • 1 cup Yogurt
  • 1/4 cup Ghee or oil
  • 2 tbsp Milk
  • A pinch of Saffron
  • 1 tbsp Coriander powder
  • 1 tsp Red chili powder
  • 1/4 tsp Black pepper powder
  • 1/4 tsp Clove powder
  • 1/2 tsp Green cardamom powder
  • 1/4 tsp Mace powder
  • 1/4 tsp Nutmeg powder
  • 1/2 tsp Kewra water
  • Salt to taste
  • Warm water – 2 and 1/2 cups
Cooking Method
  1. Heat oil in a pan and sauté the crushed onions until golden brown.
  2. Add ginger garlic paste and sauté for another minute.
  3. Add mutton pieces and cook until browned.
  4. Add turmeric powder, coriander powder, red chili powder, black pepper powder, clove powder, green cardamom powder, mace powder, and nutmeg powder. Mix well.
  5. Add yogurt, milk, saffron, and kewra water. Mix well.
  6. Add warm water and salt to taste. Bring to a boil, then simmer for 1 hour or until the mutton is tender.

  7. Cook on high flame for few minutes or until oil comes on top.

  8. Turn off the heat and dish it out.

  9. Serve hot with Roghani Naan or Chapati
