Ingredients
  • 1 whole chicken
  • 1 tbsp oil
  • 2 tsp garlic paste
  • 1 tsp red chili powder
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1 cup vinegar
  • Lemon juice as required
  • 2 pieces of coal
For Spices:
  • 50 gm whole red chilies
  • 2 tsp cumin seeds
  • 2 tsp fennel seeds
  • 2 tsp coriander seeds
  • 1 tsp ajwain
  • 1 tsp black salt
  • 1/2 tsp citric acid
Cooking Method
  1. Put whole red chilies, ajwain, fennel seeds, cumin seeds and coriander seeds on a heated griddle (Tawa).
  2. cook for 1 minute then crush the spice mixture.
  3. Add black salt and citric acid in it.
  4. Place whole chicken in a shallow dish.
  5. Add salt, vinegar, red chili powder, black pepper and garlic paste.
  6. Cover and marinate for 24 hours.
  7. Preheat oven to 180 degree C.
  8. Bake marinated chicken for 30 minutes.
  9. Now insert baked chicken in a skewer and toast on coal pieces for some time.
  10. Brush chicken with oil.
  11. Sprinkle prepared spices and lemon juice on top of it.
  12. Sajji Masala is ready to serve.
Serving Suggestions

Serve with naan and mint raita.
