The Arabian Style Smoked Chicken Mandi Recipe by Samina Jalil is a delicious preparation of chicken cooked with mandi powder served over a layer of basmati rice. So yummy!

Ingredients
- Chicken 2 pieces
- 4 tbsp Mandi masala
- ½ cup Yogurt
- 4 tbsp Clarified butter
- 1 Onion
- 1 Whole garlic
- 2 Tomatoes
For Mandi Masala:
- 2 tbsp Whole coriander
- 1 tbsp White cumin
- 15-16 Black pepper
- 10-12 Cloves
- 1 piece Cinnamon stick
- ½ tsp Turmeric Powder
- Salt to taste
For Rice:
- 750 gm Basmati rice
- 1 onion Chopped
- 2 tbsp Mandi masala
- ¾ cup Clarified butter
- 2-3 Whole dry lemon
- Saffron as required
- Boiled eggs for garnish
Cooking Method

Saute whole ingredients of mandi masala and grind them with powdered spices.

Now cut chicken in half.

Mix mandi masala in yogurt.

Heat clarified butter and fry chicken in it.

Then add onion, whole garlic and tomatoes then saute it.

Now add water to tender chicken and strain stock.

Fry chicken pieces in 2 tbsp clarified butter.

Heat clarified butter and fry onion in it and adds mandi masala.

Add stock with lemon and boil for 10 minutes.

Now add rice and salt to taste. Cook until simmer.

Give coal smoke on chicken fried pieces.

Take out rice in a dish and put chicken pieces and boiled eggs on it.

Smoked Chicken Mandi is ready to serve.
