- 500 gm Lamb mince
- 1 minced Onion drained
- 2 cloves minced Garlic
- ½ finely chopped Red capsicum
- 3 tbsp finely chopped Parsley
- 2 tbsp Tomato purée
- 1 tbsp Red chili flakes
- ½ tsp Bicarbonate of soda
- Sea salt flakes to taste
- Ground black pepper to taste
- 250 gm Spinach
- 500 gm Yoghurt
- 1 clove minced Garlic
- 2 tbsp chopped Walnuts
- 2 tsp Sumac
- Olive oil for drizzling
- Sea salt flakes to taste
- Ground black pepper to taste
- Tortilla wraps or bread 2-3
- 1 sliced Onion
- 2 tbsp Thick yoghurt

Preheat oven to 180 degrees C.

In a large bowl, combine all kebab ingredients. Mix well with your hands until a smooth paste forms. Season with salt and pepper.

Press the mixture into a shallow baking dish, covering the base. Cook for 18 minutes or until golden on top.

For the spinach yoghurt, boil spinach in water for 2-3 minutes until wilted. Drain and cool in iced water. Finely chop and mix with yoghurt, garlic, walnuts, sumac, olive oil, salt, and pepper.
