Ingredients
For Meatballs:
- 300 gm Chicken mince
- 4 Green onions chopped
- 1/4 cup Coriander chopped
- 1 tbsp Fish sauce
- 1 tbsp Red curry paste
- 1 cup Bread crumbs
- 1 Egg
- Salt & pepper to taste
For Peanut Sauce:
- 1 tbsp Sesame oil
- 1 tbsp Red curry paste
- 1 cup Coconut milk
- 2 tbsp Peanut butter
- 1 tbsp Brown sugar
- 1/4 tsp Red pepper flakes
- Salt to taste
- Rice to serve
Cooking Method
To Make The Meatballs:

Preheat oven.

Place paper over a baking sheet.

In a medium bowl mix all the ingredients for the meatballs together well.

Shape into small 1-inch meatballs.

Place meatballs on the prepared baking sheet and bake for about 30 minutes or until golden on top and cooked from inside.
To Make The Peanut Sauce:

Heat the oil in a sauce pan over medium heat.

Add the red curry paste and cook for a couple minutes.

Add the remaining ingredients, stir and cook for about 5 minutes.

Add meatballs to sauce and toss so that the meatballs are fully coated.

Dish it out.

Garnish with coriander.
